Some of reference tomes (Harold Mcgee for instance), some focus on technique (typically the ones from famous cooking schools), some are by famous chefs or celebrities, some tell good stories (see my review of Mamushka), some go into detail about nutrition or cooking for a dietary restriction (one of the best I've come across is "how can it be gluten-free" by America's Test Kitchen) and so on.There were so many off handed comments about what ingredients would give you "absolutely glowing skin" and that was quite a turn off. This is not to disparage Ella's work or story but it's hard to imagine that her blog/book would be as successful if she were a, for want of a better word, minger.
