The wort is transferred to a fermenting vat, or washback, where yeast is added and the fermentation process converts the sugary wort into crude alcohol, similar in aroma and taste to sour beer. Palate Oily and subtly spicy at first, before notes of earthy vanilla pod and chocolate-covered raisins develop. The distillery's machinery and buildings were owned by different individuals and a dispute between the two led to its closure for over fifty years in 1913.
